Can I update many fields at once (for example to change the sender type)? Can I select a large number of fields and change who needs to fill them out? 

Yes. Simply drag your cursor over the fields you need to edit, then change the role. You can also drag and drop to select a group of fields, then click delete on your keyboard to remove them from the template.
